Consumer Segmentation.

The purpose of this chapter is to describe different consumer profiles identified within the French population based on their consumption over the past fifteen days. This typology was developed using factor analysis and ascending hierarchical clustering. Seven profiles were identified: - "hedonists" (14% of the French population): for them, eating is above all a gustatory pleasure. They are predominantly men aged 30 to 39 who report consuming alcoholic beverages, ready-made meals, deli meats, and bread more frequently than others. They consume little fruit and vegetables; - the "utilitarians" (14%): for them, eating is above all a necessity for survival. These are most often men aged 18 to 29. Over the past two weeks, they report, more frequently than others, having consumed meat, deli meats, and ready-made meals; - the "balanced" (18%): this group reports having consumed most foods with average consumption frequencies. This group is characterized by the absence of specific overconsumption. They are most often married women with children. Their meal choices are influenced by household habits, preparation time, budget, and health; - the "practical" (10%): the majority of individuals in this group are between 18 and 39 years old and live in the Paris region. They report having an unbalanced diet and state more often than others that they consume pasta and ready-to-eat cereals; - the "traditionalists" (12%): these are individuals who report a diet consisting more frequently than others of potatoes, wine, bread, deli meats, and meat. They are over 60 years old and most often live in small towns; - the "informed" (17%): this is the group that most closely follows the guidelines of the National Nutrition and Health Program (PNNS). They report consuming fish, fruits, and vegetables more often than others. They are most often women over 50 who are health-conscious in the composition of their meals. - the "light consumers" (15%): this is a rather atypical group that reports low consumption of all foods considered in this study.
